Tuna Salad with Avocados and Peppers

Ingredients

One (6 ounce) can solid white tuna

2-3 tablespoons mayonnaise

1 yellow pepper, sliced and cut fine

1 avocado – peeled, pitted and cubed

2-3 California endive, trimmed, separate leaves (about 24-30 leaves)

Salt and pepper to taste

Instructions

In a medium sized bowl, stir together tuna and mayonnaise. Gently mix in tuna with pepper and avocado. Lay endive leaves on a plate and fill generously with tuna. Season to taste.
