Health Benefits of California Endive

Recently we were fortunate to see a post from Dr. S. Don Kim on LinkedIn. Here is what he had to say. "Health Benefits of Endive.  Endive is a leafy vegetable that is low in fat and sodium and is cholesterol free. Endive provides about 50% more potassium than a banana and is loaded with vitamins B, C and K, magnesium, iron, zinc and folate. With only 17 calories per leaf, endive makes for a great carb substitute for veggie dips and hummus. Endive comes in green, yellow and purple varieties. When juicing endive, consider adding other vegetables (like carrots) for a sweeter taste. Enjoy raw endive in salads or cook it for a tender yet crispy substitute for spinach."  Not only is California a nutritional powerhouse but it tastes great.
