SWEET POTATO AND BACON IN ENDIVE

When it comes to endive, you either love them or you’ve just never had one. They are crisp and on the pleasantly bitter side when raw, which makes them a great starting point for this creamy, sweet, and salty concoction to go on top!

I have to say they are arguably the most versatile ingredient that you could have in your kitchen. Eat them raw, cooked, steamed, grilled, or even braised and they are available all year round!

It is actually one of the most difficult vegetables to grow in the world, requiring a two-step growing process! Jam-packed with fiber, vitamins, and minerals we are so happy that California Endive Farms let us share this recipe with you all, so a big thank you to them!

Ingredients
  • 5-6 slices bacon, thinly sliced crosswise
  • 2 small sweet potatoes, peeled and cut into 1/4-inch cubes
  • salt and pepper
  • 4 tbsp thinly sliced fresh chives
  • 3 California endive, cut across into 1/2-inch pieces
  • 1/2 cup crème Fraiche
Instructions
  1. Cook the bacon over medium heat until it has rendered some of its fat, about 4-5 minutes
  2. Add the sweet potato and salt & pepper. Cook, stirring, until the sweet potato is tender and the bacon starts to crisp, about 6-8 minutes.
  3. Stir in 3 tbsp of the chives and season with salt and pepper to taste.
  4. Slice the bottom 1/2 of the three endives and separate the leaves. This should render about 30-36 leaves.
  5. Set the endive leaves on a platter. Spoon the sweet potato and bacon mixture into the bottom half of each leaf.
  6. Top each with a dollop of crème Fraiche and sprinkle with remaining chives.
Tips
  • Since it is a recipe from California, they have a great wine pairing suggestion as well, which is a Spicy Zinfandel, specifically a Yorba ’08 Zinfandel. Why not pour a glass (or a non-alcoholic sparkling cider) and enjoy the tasty and complimentary flavors?
